Summer Truffle
Tuber Aestivum Vittad.
The Summer Truffle, scientifically Tuber Aestivum Vittad., is a prized underground mushroom that grows in the territory of Tuscany and Umbria, in particular in the San Miniato area, where Fattoria Collebrunacchi harvests this delicious ingredient. Summer Truffle has an intense fungal smell and a flavor similar to that of the porcini mushroom, which makes it an excellent ingredient for numerous dishes.
Among its many possibilities of use, the Summer Truffle can be chopped with a special cutter and added to butter to create sauces and condiments with a particular flavour, or used as an ingredient to enrich roast meats or game. Thanks to its intense flavor and consistency, the Summer Truffle proves to be a perfect base for the preparation of dishes with a strong and decisive personality and a flavor of woods, humus and moss.
